 Fire = Flavor Toasting and charring Burning the oak is essential for the development of taste. Sugars caramelize, tannins integrate and the woody taste turns from woody oak into beautiful tones of vanilla and caramelized sugar to a deep smoky caramel. Each variety of toasting and charring has its own charms. We have perfected two versions of the BRUM bottle that gives the following characteristics: Medium toast Medium toast brings out elements of soft caramel, vanilla and fruit without overwhelming the unique taste of oak. The wood is slowly heated and held in place just long enough to reach the correct depth of the toast. Light+ char By burning the wood with precision we add smoke to the mix. The thin layer of carbon brings more sweetness and just an extra bit of oak to the surface. The carbon makes the taste experience cleaner
